*Responsibilities:*
· Responsible for the day-to-day operations and staffing of the kitchen and dining area
· Ensure all food is prepared, stored, and served according to Company standards and within individual dietary requirements as prescribed
· Ensure knowledge of Local, State and Federal regulations, policies, and procedures
· Adhere to State and/or local health code requirements to ensure sanitation standards and food safety requirements are met
· Adhere to recipes, methods, and proper sanitation principles
* Follow Consultant Dietician/Regional Dietician recommendations which are reviewed and approved by Administrator
* Ensure menus are followed, and/or appropriate substitutions are made and recorded
* Responsibly manage / supervise all Dietary staff including scheduling, assignment, direction, performance review input, hiring and corrective action input consistent with company policy
· Delegate tasks to Dietary staff to ensure kitchen and dining areas are always maintained at the highest levels of cleanliness and quality
* Ensure cleanliness of the kitchen and dining area after meals to include, dishwashing, countertop sanitation and cleaning and sanitation of equipment.
* Order supplies and maintain appropriate levels of supplies following budget for proper and efficient running of the Dietary department
* Check/maintain all equipment for proper functioning and safety
* Ensure and track Dietary staff certifications
* Create seasonal menus and ensure order has been placed with vendor
* Attend in-service meetings
* Other duties as assigned
*Qualifications:*
* Experience in long term care food service management
* Experience in personnel management
* Possess all required licensure to serve as a food service director and food handler
